Stiggin’s Downfall Daiquiri
You can make a daiquiri with any kind of rum and we experiment on a regular basis when we add new rums to our collection. While you can’t go wrong with the traditional recipe, there are times when unique rums invite the addition of other ingredients. Plantation’s Stiggins’s Fancy Pineapple Rum is a perfect example, as the fresh fruit-infused rum has a tantalizing flavor on its own and makes it easy to dress up a daiquiri.
This particular daiquiri is a combination of a classic daiquiri and another of our favorite tiki drinks, the Missionary’s Downfall, which uses pineapple and mint. We combined the Plantation pineapple rum, lime and simple syrup with chunks of pineapple and mint leaves, then muddled everything together to release the flavors of the fresh fruit and herbs. Strained out into a coupe, you end up with a richly flavored pineapple daiquri with a velvety texture, a tropical sweetness and a hint of very refreshing mint. It’s very easy drinking and we plan to drink a lot more of them before the summer is out.
If you don’t have the Plantation rum, we highly recommend that you go out and pick some up. That said, it is possible to use other pineapple rums in this cocktail, but since many of them use added flavorings, you’re going to want to combine them with a good aged rum to give the cocktail a similar body to this one.
Stiggin’s Downfall Daiquiri
2 oz Plantation Stiggin’s Fancy Pineapple Rum
1 oz lime juice
1/2 oz simple syrup
3-4 1-inch chunks fresh pineapple
5-6 mint leaves
In a shaker or mixing glass, combine simple syrup, pineapple and mint. Muddle well, then add in lime juice and pineapple rum. Fill with ice and shake vigorously until cold, then double strain into a chilled coupe. No garnish.
