One of our favorite rums in our bar is Appleton…
Tiki Fix
A good drink starts with great rum. One of the biggest mistakes that people make when they make their first foray into rum and tiki drinks is that they assume all rums are created equal – or that they are at least similar enough that you can interchange them and get roughly the same result. This is not the case with rum, a spirit which can have a wide range of unique and complex flavors in every bottle. We often find ourselves blending rums – dark and light, rum and rhum, flavored and classic – to add dimension to our cocktails, but it is nice to have a drink that will really let one individual rum shine. If you’re looking at a bottle of well-made Jamaican rum, look no further than the Tiki Fix as a way to show it off.
This cocktail adds in a few elements that compliment the funky, fruity flavors that Jamaican rums are known for. We make ours with Smith & Cross, a crazily rich-tasting pot-stilled Jamaican rum that has all the funky elements that make Jamaican rums memorable. If you don’t already have it, we highly recommend it, as it is just about perfect in this Fix.
We were generous with the honey syrup – which we typically make with a 1:1 ratio of honey to water – in this recipe for a couple of reasons. The first is that honey goes exceptionally well with both the pineapple and the lemon in terms of flavor. The second is that the pineapple juice needs the sweetness of the honey syrup to highlight it and let it stand out against the other ingredients. If you cut back the honey in this recipe, the pineapple may become somewhat muted.
Tiki Fix
1 oz Smith & Cross Rum
3/4 oz brandy
1 1/2 oz pineapple juice
1 oz lemon juice
1 oz honey syrup*
Combine all ingredients in a shaker, fill with ice and shake vigorously
*This recipe uses 1:1 honey syrup. If using a more concentrated syrup, reduce the amount in the recipe.
