Pineapple Express
Great tiki drinks are known for having layers of flavor, thanks to the combinations of different rums, syrups and fruit juices that go into them. At times, the ingredient list for a tiki drink can look a little intimidating. While it is great fun to go to a well-stocked tiki bar, it’s always a treat to be able to make a great drink at home. If you’re looking for a one-bottle tiki drink – or simply in the mood for something that won’t take you long to put together – you should definitely start with this Pineapple Express cocktail.
The drink uses Plantation pineapple rum, pineapple juice and a generous dash of Jamaican bitters for a long drink that is tropical and refreshing. The pineapple rum, of course, has a ton of flavor on its own, which makes it an excellent base for a recipe that uses only one type of rum. The bitters have some of the same spices that you might find in allspice dram, but the bitters bottle takes up a lot less room when shelf space is limited. As always, use fresh lime juice for the best results. You can, however, use quality canned pineapple juice instead of fresh.
Pineapple Express
2 oz Plantation pineapple rum
2 oz pineapple juice
1 tsp lime juice
1 tsp simple syrup
6-8 drops Bittercube Jamaican #1 bitters
Combine all ingredients in a mixing glass or shaker, fill with ice and shake vigorously until cold. Strain into a tall glass filled with crushed ice. Garnish with pineapple fronds and a cherry.
